This is super easy and a great protein for breakfast!
So one of the things I learned in my three week slimdown is a great breakfast recipe. It's pretty much an omlete that looks like a muffin!
All you have to do is mix up your eggs like you were to scramble them, I use a dozen at a time, this allows me to have enough for the week and not have to make them so many times. When you have the eggs ready as if you were to scramble them, add some vegetables. I usually put in what are called power greens and mushrooms. You can easily add peppers, onions, and even some sort of meat, whatever you like in an omlete really.
Preheat your oven to 350degrees. After you're got them mixed up put them in a greased muffin man. I use the Pam spray to make sure they don't stick. Then, place them in the oven and watch them grow. I usually cook them for 15-20 minutes, but watch them closely. I end up poking them with a fork when they look about done, just to make sure there is no raw egg hiding.
When I take mine out, they usually colapse a little and I'm not sure if that is normal, but the still taste good! When they are cooled I'll put them in a container and throw them in the fridge until morning. In the morning I'll pull some out, throw some shredded cheese on top and warm them up for 30seconds.
This is super easy and it's also quite filling! It's also something my son can just grab and take with, too!
